Caesar Salad with Homemade Croutons Pairs well with Frutézia® Sunshine Blend Serves 4
2T Olive oil 4 Garlic cloves 1/4 t Salt 1t Worcestershire sauce 1 Egg yolk 1/2 t Black Pepper 1T Fresh lemon juice 1/3 C Olive oil 1/4 t Sugar 1/4 t Dijon mustard 1 Head romaine lettuce, washed and ripped into bite-sized pieces 2C Day-old bread, cubed 3/4 C Parmesan cheese, grated Additional salt and ground black pepper to taste
To make the croutons Heat the olive oil in a frying pan over medium heat. Add 2 quartered garlic cloves to the hot oil, cook until brown, and then remove the garlic from the pan. Add the cubed bread to the hot oil and cook, turning often, until they're lightly browned. Remove croutons, drain on paper towels, and season with salt and pepper to taste. To make the dressing Mix the Worcestershire sauce with garlic, egg yolk, 1/4 teaspoon salt, 1/2 teaspoon pepper, sugar, Dijon mustard, and lemon juice--preferably in a blender. Then slowly pour in 1/3 cup of olive oil. Blend until combined To make the salad Toss the lettuce, croutons, and parmesan with the dressing and enjoy!
